In the Blue Casket in the game, you can hear different poems read to the audience. One of them goes: With bony hands I hold my partner/ On soulless feet we cross the floor/ The music stops as if to answer/ An empty knocking at the door/ It seems his skin was sweet as mango/ When last I held him to my breast/ But now we dance this grim fandango/ And will four years before we rest.
Also, for the meaning, see http://www.lucasforums.com/archive/index.php/t-78103.html

-I was speaking metaphorically.
-Well stop it! It's not fair for Teal'c.

Fandango is a spanish dance, which is the style of the guitars we hear throughout the game.

Grim Reaper is the 15th century personification of death as a skeleton with a black robe and a scythe. (Grim means macabre, sinister).

So Grim Fandango could be translated as Macabre Dance

Give me fuel, give me fire, give me that which I desire...
