Why would Eric bother to ask the question and give Sinbad an oppurtunity to get the book? She didn't even need Sinbad in the first place!

Yes, it was all about the game. When Sinbad was further involved, and she still needed the book, Eris decided to acquire it herself.

I would say it was more because she wanted to have the Crown Prince Proteus beheaded, as she explains in the end. The Book of Peace wasn't the main part of her plan; Sinbad's perceived betrayal was.
