Does anybody know why he took the hooker & the man's clothes?

Ghost Dog spent some time watching a lot of people until he saw a big man with a similar build. He stole his clothes to use as a disguise to infiltrate the mafia mansion. He stole her clothes so that she wouldnt run off immediately to raise an alarm.

Quite logical in both respects.

Another question would be why does he give the suit to the Haitian ice cream guy but I figure it's probably not much more than he was always giving him ice cream and Ghost Dog knew he (himself) was not going to need it again

Yeah the ice cream reason. I was thinking that it was a nice counter point to compare with the fact that everyone else had selfish greedy reasons to be involved with each other while the simple pleasures of ice cream and a good book drew Ghost Dog, the icecream guy and perlene together as friends.

Finally, someone explained that for me. I always wondered why he did that.
