Sea urchin ceviche

ceviche is literally a Latin American equivalent to gumbo where you throw in a mish mash of animal innards (in this case sea creature innards) and mix it up with chopped onions and tomato. Purists from Peru and Ecuador will argue who originated ceviche but you can find this all over the world.

American Psycho did a great job mocking the absurdity of Wall Street ghouls pandering to each other's self-absorbed culinary prowess.

Nah, ceviche is just raw meat (fish or other) soaked in lime fruit juice (for chemical cooking) and tasty addons. Of course with dozens and dozens of variations. It's delicious.

animal innards IS raw meat, and different locations around the world use different sea life but it's mostly fish. Personally I prefer the variations that include calamari even though I can't stand it as a stand alone food

I've eaten ceviche and eaten sea urchin sushi, and after eating sea urchin once I have no desire to try it in ceviche!

Ceviche is all over Chile, BTW. I went last year, and had a dozen varieties, including one with huge chewy corn kernels in with the seafood. It was delicious, beats the hell out of sea urchin guts.
