I'd say the poison scene. Itto sure is a clever guy.

When the pickpocket comes up to confess, in order to spare little Daigoro from a beating. Well, he gets beaten anyway, but he holds true to his promise.

I have to agree with the pickpocket scene.

That scene was my favourite in the film and one of the best in the series.
