I think it's safe to deduce that he didn't sign the contract, but decided to stay and run the vineyard and live happily ever after with Claire. He kept saying " I'm home...etc", and throughout the movie they made such a point of stressing how much like his father he was and how much he loved the winemaking, that after he found "true love" (in a week!!!??!!), it's unlikeley that he would up and go back to the UK with her.
