Gotta be "Cell" from season 3.
Rab gets thrown in jail blootered and it's just him, a mute, suicidal fellow inmate and a sadistic turnkey copper.
It's just awesome, like a Beckett play but much, much funnier.
It's always been an uneven show, but even the new episodes have good stuff in them and this show achieved moments of utter greatness at times.

There's a few I really like. They are:

Life has Meaning: Rab's encounter with Billy the Warlock played by Peter Mullen which has several classic moments ie. Gash becoming a hari krisha and the very end. I also love It's observations on religion and the sanctimony and ignorance of evangelical Christians.

Lesson: Because of It's poignancy. Rab looks back at his school days and his first love. It's a fine example of bitter-sweet comedy and while still quite as funny as some episodes It's still incredibly memorable.

Hoaliday: The family win a holiday to Spain where they join the Cotters who have already booked their's. This contains a few of my favourite moments from the series ie. Rab meeting a Spanish version of himself and the moment where Rab attempts to seduce Ella.

While I love getting back into hearing all the Glesga patter, my favourite episode is Semmitry (s06e04). The way that they handled something as potentially catastrophic for viewers as terminal cancer was brilliantly done. In fact, I can't believe that they didn't win some award for that episode.

We've had several bouts with cancer in our extended family, my mother (God rest her), my wife, and three of her extended family and I can tell you that I have NEVER seen the topic handled so well in a comedy show. They should be congratulated on a brilliant treatment (no pun intended) of such a sensitive subject.
