From a female's view, I can see how he loved her. The way she was in front of other people, the friends she had that was a an act. She felt like she had to be everything to everyone. He didnt require that, He saw her for who she really was on the inside. He didnt pretend to be someone different, or rich and suave. He was true to who he was, he said what he felt...no games. She finally "grew up" and realized that's the way to be and realized she loved him.

Actually, you know that's not how the film really ends, right? That's the "Babyface" ending. They forced Chris Cherot to take on a "happy ending." However the original cut of the movie, the one that showed at film festivals, ended after the letter... which is an infinitely truer and better ending.
