What is it that 'rats won't do'?

I guess I wasn't paying enough attention to get the meaning of the title...

At one point one of the character's says something like 'lawyers will do anything that rats won't do.' I think.

I think it's James Frain's character Jack Sullivan, and he says something like:
A recent study shows that more and more, scientists are beginning to use lawyers in place of rats for their research experiments. This study found that lawyers were better research subjects than rats for several reasons. There were more lawyers available than rats; researchers had started to develop empathy for the rats; and there's some things that rats just won't do.
(Not sure if it's exactly what he says, I've only seen the German dubbed version of the film. Found this through Google.)

cloudyskye...that's the gist of it. it's an old lawyer joke to show that lawyers are basically slimeballs...and worst than even a lowly rat.

btw...i LOVE this movie :)

Love it too. A shame it is not out on DVD, considering all the crap you actually can buy. I would love to see (or rather hear) the original, since on German TV it is always, always the dubbed version. BORING! And even that could not ruin this great and funny movie.
