I don't see the problem at all and nothing is contradictory for me. Jake was in jail for more than 6 years, 6 DAMM YEARS, and the fact that he wanted to have sex with a woman is just an human reaction. You wanted him to be a monk for the rest of his life ? Plus Dakota isn't just a prostitute for him, she's like his only "friend", the only adult person with who he can talk and in a some ways they are similares, I think both have good heart but the life and some bad luck made them what they are today (I remember that she make a joke about it ?!?), a bad night for Jake and a poor childhood for Dakota (which is the case for most of the prostitutes).
The only "guilt" that he has (other than the fact that he killed her) is that Dakota was the first woman with who he had sex since the death of his wife, that made him remember her more than usual, I think it's why he visited her grave just after.

yea i thought about him visiting the grave to. and maybe when he was done having sex with her, he wasnt so much upset because he got it up too fast but because he was disappointed in himself for betraying her. i mean, i obviously didnt expect him to be a monk as you said but i dont know maybe its just me. i mean if i killed my wife I'd already have crazy guilt like he had but to then go and have sex with another woman, i dont know maybe its just me. like im a guy and i fully understand urges but i think the guilt would overshadow the urge.
