Why they cut so many stuff from the fight scenes ?

Acording to the trivia section: "A lot of quality fight choreography by Sammo Hung Kam-Bo was cut from the films final release. This included the drastic shortening of both Jeff Wolfe and Michael Miller's fights against Jean-Claude Van Damme in the finale"
Is there a specific reason why all this stuff got cut/edited ?

No clue, but I wouldn't doubt it was because the studio was marketing it as a Rob S. comedy instead of a JCVD action movie.

I seriously doubt that. Very little in this movie besides some of the comic elements screams "Rob Schneider". Not with all that action and killing. You can't compare that to any of his other more successful movies and think that Knock Off would have drawn his type of audience. Most of his movies have been semi-chick flicks.

I know. If they had left the fights in, this movie would have been a lot better.

This was before The Matrix which proved that people could put up with a fast-paced and intricate martial arts fight scene that was longer than four minutes.

Yep. Hollywood wasn't quite onboard with it yet as a new style of shooting action scenes. I think Lethal Weapon 4 kind of laid the groundwork with Jet Li as the villain.
