I'm not a vegetarian and don't know all the cuts of meat.

The first time Redford and Cooper are at the dinner table helping themselves to a serving of meat that looks to me to be on the raw/underdone side. Anyone know what cut of meat it was and was it underdone?? It may have been intentional because they also show Redford using alot of butter. They may have been hilighting the fact that this is a ranch and this is what we raise.

Yeah, I was wondering the same thing--what the heck is that meat they're eating?? I thought it looked kind of like ham.

I'm pretty sure its ham. And every time I watch this movie (its one of my favorites) that scene makes me hungry for ham. :)

It's roast beef. I know that because Diane Wiest's character asks if they would like some roast beef while holding the platter.

It's rare roast beef. Rare as in not quite cooked medium and certainly not well done.
