Or was he just a professional gambler who had a murderous temper?

Jimmy calls him a hood.
He's knowledgeable & comfortable with guns.
He shot John's father.
He calmly waited for & shot Jimmy.
Therefore it's no stretch to believe he's killed others also in the past.

Aha! Thank you for the brief explanation. Somehow I missed that Jimmy shot John's father.

It was Sydney who killed John's father, not Jimmy. Jimmy had threatened to tell John about it.

Yeah, he is a non hitman who has connections to other gangster... including Floyd Gondoli, a character from Anderson's other movie 'Boogie Nights'. Interestingly the character was also played by Baker.
