Definitely - Raise the Red Lantern
and Yimou's "To Live."

Xiu Xiu-The Sent-Down Girl is also good.

Farewell, My Concubine.

Although not entirely a "Chinese" film, nevertheless is quite good and melodramatic is The Last Emperor.

In a similar category is The Red Violin which has one part set in China.

red lantern was wonderful as was red sorghum. has anyone seen the one about the 4 or 5 sisters? can't remember the title.

The White Countess and The Painted Veil (both produced by Western film companies, but nevertheless have stories set in, and filmed in, China).

I've also heard "The Bird People in China" and "The Little Chinese Seamstress" are good, too, though I've not seen either of them (yet).
