What is the significance of the boy losing the coins from his pockets?

This isn't on authority it is just my opinion, I'll explain why it is my opinion but don't get upset if it doesn't please, you can form your own opinion.

What I think is that his loss of coins, which when given to him she told him when he got enough money to buy a shop and leave Shanghai, meant that he lost that dream of his to own a shop. Another thought on the matter would be that his willingness to struggle against the ropes, because of the lies being told to the young girl, might show his being bound to her in future as it is through events that led to his meeting her which made him both gain the coins and lose the dream, making her the replacement to his dream and of Miss.

Again disclaimer, perhaps I even have an overactive imagination and this was all the musings of a deranged person. Maybe though it'll spur your own thoughts on the matter.

I would go along with that.

Nice/good movie that IMHO is better than the ratings it gets here. A good story line, beautifully and interestingly photographed, and well acted by everyone, especially by Gong Li and the boy

I wonder who the boy is. It appears that he has not done any movies since.

This is my opinion. The Boss tells the girl that Shuisheng is tied up in order for the boss to train him. Shuisheng's destiny is bound to the Boss, and even as he is helpless to protect the new "Miss", he is also losing his dream of opening a shop.

Right on. Those coins represent his dreams slipping away and sinking into the water forever.

Just curious, does anybody know what kind of coins those were, anyway? Were they gold?

The coins are Yuan Shi-Kai silver dollars, a common currency of 1920's.
