Read the trivia. They started this project 14 years ago in 1990. Obviously if both Candy and Kahn are in it, they must of already have read and recorded their lines prior to their death.

It's not rocket science.

According to gunsonfrench:

The Magic 7 project has finished off about 3 companies along the way. I was working for the 2nd one back in 1996, redesigning some characters. All the voices were already recorded back then. Madeleine Kahn and John Candy both contributed voices although only Candy was dead at the time. Jeremy Irons was also being saught for one of the villain's voices back then. Jennifer Love Hewitt was only about 12 when they filmed the live action that bookshelved the animation. I heard that Disney had taken over the project a couple of years back, and have been interested to see if all the stuff I did was thrown out, or if any trace of it remained. The story was not wonderful but the talent that signed up for it amazed us. Don't expect to recognise all the voices though- Micheal J Fox puts on a French accent and Demi Moore's is some kind of crazy German impression.

So that should explain it, and it will be funny to see/hear so many great actors in this movie :)

Oh, weird I thought the same thing and said it on another post, saying how TLC still had Lisa Left Eye's words in their new album that they just took John Candy's words from the past and added it on to this 2004 movie. After over reading that this movie was made like 14 years ago or so as it says, I definitely had no idea.

No, John Candy and Madeline Kahn were ressurected from the dead and recorded their voices, then went back to their grave knowing that they'd done enough.
