One that comes to mind would be "The TV Set" which follows the making of a TV pilot.

Mario van Peebles' BAAAADDDDAASSSSSS or however many letters are in it and the documentary American Movie come to mind right off the top of my head and both are better imo.

"...and God Spoke" is a very funny behind the scenes documentary of a couple of B movie makers trying to make an epic religous blockbuster. (Spoiler: Soupy Sales is Moses, Heston wasn't available)

Not necessarily a "film about filmmaking," but a film whose structure this borrows heavily from is The Discreet Charm of the Bourgeoisie, directed by Luis Bunuel. The plots follows a number of white collar types as they repeatedly try to have dinner with one another, but something always goes horribly awry to disrupt their plans, only to awaken and realize it was a dream.

A Canadian take on this would be the recent This Movie Sucks, a movie within a movie within a movie. It CAN be a bit confusing with so many layers though.
