Why didn't Izabella Scorupco have a bigger career in Hollywood post-Bond?
It appears that her most high-profile roles since GoldenEye are Vertical Limit, Reign of Fire, and Exorcist the Beginning:

But those roles aren't exactly the types that could make or keep you a household name or put you on the A-list. I don't want to chalk if up to the classic and supposed "Bond Girl Curse" because in my mind, that's a bit of a cop out and obvious excuse.

And much of her acting work since then, appears to be in her native Sweden.

She was apparently considered for if not offered Kim Basinger's role in LA Confidential and Catherine Zeta-Jones' role in The Mask of Zorro. The latter of which, would've reuntied her with her GoldenEye director, Martin Campbell.

My fave example of an actor not wanting a role ENOUGH was bond girl Izabella Scorupco who apparently made a big impression in Goldeneye. She was offered Kim Basinger's Oscar-winning role in L.A confidential and turned it down. Martin Campbell (director of Goldeneye) wanted to cast her in CZJ's star making role in Zorro but she turned it down too. She didn't do an English language film again until 2000 when Campbell cast her in Vertical Limit.
