Later in the film Vincent talks about watching an episode of "cops" and also @ the diner he gets the Green Acres reference Jules makes to Arnold the pig.

I wonder what that line means. Is it to show Vincent's character is unsure of who he is himself hence being very uncomfortable with Jules leaving?

I think Vincent is trying to keep calm before whacking Brad, so he keeps Jules talking by any means necessary.

He might have watched some episodes of COPs to get an idea of police procedure? It might be a good idea for a career criminal. That’s all I got.

He just said he dont watch TV not that he has never has watched it, it may of been more of a recent thing where his lifestyle chose not to watch it but doesnt mean he had never seen these programs before.
Thats how i took it anyway.

Agree. I think he meant he didn’t watch it regularly.
