It has been a long time since I watched the show, it was awesome back in the day. I was wondering do the gargoyles need to explored to sunlight to turn to stone or is it when the sun comes out they turn to sunrises they turn to stone no matter where they are?

Nope. in 'The Price', Hudson was imprisoned by Xanatos in an underground lab without any windows. He still turned to stone.
There is one point in 'Future Tense' where they do get turned to stone by artificially-created sunlight... but that was inside of a virtual construct inside of a magical illusion created by a fairy, so it's understandable if that wasn't exactly consistent.
And also in The Silver Falcon, when Broadway and Elisa were trapped underground, daylight came and Broadway turned to stone.
