The dance number was improvised (in universe). The original plan was to just sing like a regular old boring Catholic choir.
shareRemember, this is at the same "state" competition anyone can just sign up for, without going through any preliminary competitions to weed out the under-performers. I'd imagine in the 12 hours it would have taken to get through every group that entered, the kids might have done some extemporaneous music and dance work to pass the time.

I used to think it was just a 'magic Hollywood moment' too, but in the scene where Rita's mother came home and Rita was learning the song listening to her tape recorder, the music they danced to was the music playing through her headphones. That was the version they were going to do all along.
