He spent several years repeating that one day. He learned multiple languages and other arts. There is a great YouTube video about how many years he lived the day.
Think about how long it would have taken him just to notice, and memorize all the steps involved, to be able to grab that bag of cash. At which point he bought a Rolls Royce to take his date to the movie he had seen "hundreds of times".
He got to know every resident of the town.
He learned the equivalent of medical school.
He became an expert at the piano.
He learned to speak French fluently, and memorized French poetry.
He learned to be an expert ice sculptor.
He spent six months, "four or five hours a day", practicing flipping cards into a hat.
He apparently walked every inch of every street in town, at various times of day, to discover things like the kid falling from the tree and the older ladies who needed their flat fixed.
And there are I'm sure many more things I'm forgetting or which weren't shown.

Ha, true. Unless he has actually bedded Nancy earlier in the day (seems unlikely but possible), that's one of those moments (like the piano teacher and some of the people in the diner) where they kind of stretch the premise a little bit (in terms of sort of blurring multiple days together) to make it more amusing.
She looks at him because he looks at her first and says Hey Nancy. Then he tells his date they used to be engaged. Nancy is clueless as to who he is in that scene.
"On the DVD, Harold Ramis states that the original idea was for him to live February 2nd for about ten thousand years. Later, he says that Phil probably lived the same day for about ten years."
