Possible explanation of why Max said he saw the decapitation.


*Spoilers, possibly.

When Max says that he saw his partner get decapitated during the crash he wasn't lying.

The scene at the end of the film where he lets go of Jeff's hand during the crash to go up and sit next to the young boy who is alone on the flight is a symbolic portrayal of Max seeing Jeff die, letting GO of him, and then joining the survivors (Byron, the little boy he led out of the plane, and the rest of the passengers who survived the crash.)

That's why the whole scene of Max releasing Jeff's hand was slowed down, it was an important statement by the filmmakers. Max removes Jeff's hand from his own, stands up, and smiles at Jeff as he walks away from him towards Byron, and during all of this Jeff is trying to cling to Max, with a confused and terrified look on his face.
The moment Max lets go of Jeff's hand is symbolic for the moment Jeff gets decapitated.

I don't think there's anything inherent about letting someone go in terms of their being decapitated, I think it seemed like he let him go because Bridges had moved into a state where he was no longer (consciously) afraid anymore whereas the other guy was terrified...I thought it was relatively clear that he was referenced the manner of death because the lawyer wanted him to give a detail that proved he knew his partner was dead.
