His real assassination was exactly how Joe Pesci got whacked in Casino. Walked into the house and took a few to the back of the head - he was then taken to a funeral home the mob had ties with and was cremated.
He was killed simply because the then president of the teamsters was scared of the mafia and had done some very stupid deals with them (skimming $$$) that Hoffa would have erased had he become president again, which he was about to do.
They told him after he got out of jail to leave the scene and go enjoy his family - Hoffa didn't do that.
Yes the end was very wishy-washy. He had been waiting at a restaurant in Detroit for the mob boss so they could talk and had also called looking for him on the pay phone. That's when Sheeran pulled up and told him the meeting was at a house close by - you know how that ended. They even found a few of his hairs in that car, which was what made Sheeran the #1 suspect. Turn out they were right the whole time.
No clue why the movie swayed so far from that - even including adding Devito too???

I think you mean Goodfellas. In Casino Pesci got beaten to death with baseball bats in a cornfield despite the fact that in real life the character he was playing & his brother (although buried in a farm while still breathing as depicted in Casino) were beaten in a house using a similar ruse as in Goodfellas (his brother was supposedly going to become a made man).
