The actor you are thinking of is Joe Pichler. He was in the 2nd and 3rd installments of the Beethoven movies. I do not believe that he has been found, but I understand that he may have left what is believed to have been a suicide note.

Pichler was in the 3rd and 4th installments because Castile abandoned showbiz to get a master's degree. Pichler gave up acting at 15 years old, and disappeared when he was 18.
