The chief of police has the following exchange with Johnny:
- I like to make sure that all my people maintain sound cardiovascular fitness. We don't drink, and we sure as hell don't smoke.
- Sir, I take the skin off chicken.

What exactly is wrong with chicken skin?

Chicken skin is high in fat. Skinless chicken is generally considered a healthier alternative to skin-on chicken.

But chicken fat is healthy...Besides, there's not much skin on a chicken in proportion to the meat.

Whether it was a myth or not it was a common belief (and still is to an extent) that taking the skin off of chicken was healthier.
