Why the fake blows?

I couldn't help but notice that when there is an onscreen fist fight or beating, the men hitting clearly miss their target, yet the sound and the reaction of the opponent is the one of an impact.

The first one comes off as a goof, but they are too recurrent to be mistakes; no one is that sloppy. Did the Coens intentionally make it that way? If yes, why?
