I wonder if something like that depends on a woman's age (and how good of physical shape she's in) at the time. Like say if somebody like Christie Brinkley, who is 65 now did something like that today. Should we be immediately repulsed by it because you're just thinking "Eew, she's old enough to be my grandma!"?

I always thought that the whole point was that you were supposed to be surprised that the woman fan-dancing was actually a middle-aged (I think that Nichelle Nicols was in her late 50s at that the time) Uhura. I don't necessarily think that it was 100% meant to be unironic fan-service (no pun intended). Plus, it was a nice excuse for Nichelle to display her singing talents.
