Cuz he was just great as a pianist. Actually I play the piano, and I always notice is somebody is a 'fake pianist' in a movie. But in this case... there was absolutely no sign, proving that Quaid cannot play the piano.

He can play, and he could before they started filming. I don't know how good he is, but he is in a band (not sure if he plays piano in the band or not).
If you notice the first scene with Quaid, he plays the little intro when the camera is in real tight, but just as the camera pans off his hands the music picks up a lot. He still looks pretty decent, but he is no Jerry Lee Lewis, and except for that one scene, all the piano from the movie is provided via JLL.
As a final note on the music in the movie, none of it is the original music, Jerry re-recorded all those songs when the movie was made. He's still got the talent and I personally think the re-recorded versions are even better than the originals.
