Eating pork chops ???


Hoke gets the left over pork chops but decides to eat the salmon. Jews don't eat pork so how could Daisy have leftover pork chops ?

She also complains about being late on their trip because her cousin will have fixed crab - Orthodox Jews don't eat shellfish, either.

Perhaps more important is/was that most African Americans don't eat pork either, especially cuts that are not cured, but also the denigration and establishing where Hoke stood in the pecking order by having him eat left over pork chops.

I mean there was no such thing as left over pork chops at that time. Woman would have the butcher cut and they would prepare the exact number of chops they needed, for they were basically uneatable as leftovers.

In the rarity there was a leftover chop, it would usually go to the dog.

Whenever I fry pork chops I always fry extra. I love a cold leftover pork chop.

Different time. This was long before the food channel and I've lived in Atlanta for over fifty years. We may get ice twice a year.

What I do with left over pork chops is make a sandwich out of them. I carefully trim any fat and remove the filet from the bone if not boneless, then cut sipes about half way through the chop long wise. I turn it over and do the same across the short side. Cutting it this way makes it very tender in a sandwich (you don't want the whole chop to pop out of the bread with the first bite). I sprinkle a little hot sauce on it and microwave it to reheat, then melt a piece of cheese on it. Put it on toasted roll with lettuce, tomato and onion and enjoy.

Ever heard of Steak and eggs? Chicken and waffles? While they didn't originate, they proliferated in the African American community, for most don't eat Ham, bacon or pork sausage.

I mean, good Lord. Salmon out of the can is basically cat food and Hoke opted for that over eating pork.

Pecking order had nothing to do with it. Nothing wrong with leftovers; very little gets escapes my refrigerator uneaten. But the pork chops in question were stiff, which means they were a bit overdone when first cooked. A bit overdone is no problem when first served but a bit overdone as leftovers is a different matter.

These threads have a way of becoming runaway trains and I’m as guilty as anyone of pulling the pin, for the directions was more about the can of salmon and not the pork chops.

That said, I was raised in Atlanta and during the sixties the only thing I recall that made a repeated trip to the table was a cake.

Frost-free refrigerators, microwaves and retrofitted air conditioning for the older housing stock didn't make their way into our homes until the seventies and eighties, but primarily, domestic help to clean, provide child care and cook two meals ran four dollars a day.
