absinum? red rats?

mob boss (price) says "absinum" while stroking a rose..
one of the mobsters at the end says "I wanna make him see red rats"
Can anybody explain these expressions?

Movie was Rated low but was still better than 90% of current movies.

I could be wrong but I always thought he was saying "Absalom." Kind of a biblical reference to Hopper's former status as favored, trusted one who turned against his mentor....

the red rats thing I never worked out....
