How did Biff know?

I never understood this part for years. How did old Biff know that Marty and Doc would figure out that HE was the one who stole the almanac and ask his younger self? Let alone realize that the almanac altered history. The only way they figured it out was seeing the picture of young Biff with the book in his pocket. I'm wondering if old Biff put everything together in the future and didn't want to take any chances. But still that's pretty smart, especially for Biff! Doesn't keep me from enjoying this movie though!

Didn't he just say one day they MIGHT show up asking about it?

Yes, Biff suspected that Doc and Marty might come looking for the Almanac once they found out about 1985a, or the Hell Valley tangent. Biff began suspecting that he was getting screwed with in 1985LP when he witnesses the flying DeLorean take off from Lyon Estates and disappear, as he's outside working on George's BMW. 2015LP Biff then overhears Doc and Marty talking about what the DeLorean actually is, then recovers the Almanac from the trash and begins formulating his plan to get it to his younger self using the DeLorean.

"So, Doc Brown invented a time machine." -Biff Tannen

The fact that he got the Almanac to the version of himself in 1955 that was prior to the Enchantment Under the Sea Dance was either coincidence, or the date that Marty traveled back to 1955 was still stored in the time circuits and Biff took advantage of that. 2015LP Biff didn't tell his 1955 self Marty's or Doc's names, nor did he tell 1955 Biff to avoid George's sucker punch. But 1955 Biff must have suspected that Doc Brown was the inventor of the time machine because he had Doc committed in the Hell Valley tangent, sometime after murdering George in 1973a. Biff never suspected that Marty would be the "kid" that 2015 Biff mentions to him. He was genuinely surprised when Marty asked him about the Almanac.

It does seem funny that even though Biff had the foresight to warn himself about the scientist and kid, in case they figured out it was him that stole it , but didn't occur to him to warn him about George's punch.

Actually , maybe his foresight was so 20/20 that he knew it wouldn't matter if George punched him and ended up with Lorrain, he knew that once he was rich enough he'd still become a big deal and find a way to get her.

Good point. Looks like Biff's intelligence did increase (if only slightly) as he aged, although he didn't consider the implications of altering the past to change his own future, so I have to take away a few marks for his lack of insight.

This whole tangent should also definitively answer the age-old question about George and Lorraine not remembering their son Marty as 1955 Calvin Klein. 1985a Biff didn't remember him, either, and Biff had the most contentious relationship with Calvin during his week in 1955 Hill Valley. All Biff knew was that his stepson Marty was supposed to be in Switzerland but was, instead, at his Casino.
