It was partly shot in Utrecht and partly in Amsterdam. The sene where the boat slides over the terrace with people was filmed in Utrecht because Maas thought that would be so cool and most people wouldn't recognise that 'goof' anyway.

Amsterdam didn't have 'werfkelders' or other wharf parts that are almost on the same level as the water in the canals. So the boat slide scene had to be shot in Utrecht.

Right, the jump with the boat over the bridge was done by the same stunt man Nick Gillard. He has an entry in 1999's Guinness Book of Records for longest boat jump (67 meters over two bridges), he broke his own record from "live and let die".

The race already was filmed in the same way like in "The rats of Amsterdam" from 1971. Even the colors of the boats were the same.

Same goes for the bakery scene. That was always shot at de Oude Gracht in Utrecht. Especially since the store next to it is a snackbar where I used to go a lot after a night out in Utrecht :)

That's because in trivia says;

While most of the speedboat chase was shot in Amsterdam, some scenes were shot in the nearby city of Utrecht. These involve the part where both boats jump onto the quay and plow through the chairs and tables of a terrace. Such low-lying quays can not be found in Amsterdam, only in Utrecht.
