Julia Montgomery refused to reprise her role as Betty because in the original script Betty is caught cheating on Lewis. Montgomery felt it betrayed the change in her character from the first film. Joe Roth offered to have the scene re-written but Montgomery still refused.
So she had sex with Lewis (who she thought was Stan), but because he's so good at it, she falls in love with him? That's hard enough to believe, much less to say the character had spontaneously changed her ways.
