Would someone like baldrick know to read and write?

In Dish and Dishonesty he doesn't know how to sign his name and simply writes an X, but in Ink and Incapability he writes his "novel".

Presumably he knew how to spell "sausage" at least.

While it is unlikely that he could read and write, he unlike many peasants of the day had access to those that could. So I guess he could have had someone write it down for him.
