All the other killings made sense. She was pursuing revenge for those who put her away. But why kill the parole officer?

I don't think she wanted the parole officer keeping tabs on her. Plus, as she explained just before strangling her, "They never should have let me out. I really am crazy."

She's a homicidal maniac. That's why she killed the parole officer. Same reason why she killed her security guard boyfriend in the first place, and presumably, the corrupt cop who planned to turn Murphy over to that scumbag Vincenzo.

Did anyone else find the coincidence weird that Bronson's 2 separate enemies - the mob and the psychotic woman, all met up at the same location at the end but pursued same interests for different reasons? Or was that woman in some way also connected with the mob?

It wasn't a coincidence. Murphy called the corrupt cop beforehand thinking he would bring backup to help arrest the crazy bitch and save the girl of course. But he was on the mobster's payroll so Jack had a hell of a battle to contend with.
