What's the point of winning the Prize

if besides giving you omniscience it also turns you mortal, and so you'll die not shortly after having all the knowledge. That knowledge would then be lost along with you.

One could say that at some point immortality may become a curse instead of a gift, considering all the people you witness dying because they are not immortal. So the Price really is a reward but it makes no sense regarding to the movie. Why would the Kurgan try so hard to kill all other immortals to win the Prize so that he can just die and besides if an immortal decides to leave this earth he could just decapitate himself :)

at the end of the film we see what The Prize is for Connor MacLeod. had the Kurgan won the Prize , it was to be something very different.

No one knew exactly what The Prize was. They all probably assumed it was some kind of great power that wouldn't end up making them mortal.

DISPLAY thy breasts, my Julia!
