Would that move against Swede really have worked?

I get that Gunny had control over swede's arm, but wasn't he strong enough to just pull out of it, or kick at Gunny's legs, or use his other hand to release Gunny's grip on his elbow?

I'm sure it takes practice to perfect that move, don't get me wrong, but is it really that "easy" to incapacitate someone twice your size once you know that elbow-bend move?

well i can assure you that it is easy to gain control over a person over twice your size if you know how to do it but if your looking for realism heartbreak ridge is not the movie for you
for one
force recon is a special ops team. and all members are highly trained in hand to hand combat.

Clint Eastwood does not fight like someone from SF.
he fights like an old western fist fight in all of his movies.

if he was serious about authenticity he should have had a military adviser in hand to hand combat of the special forces

I don't know about the rest of it, but I have used the technique where he caught the punch. The guy on the other end of the punch was surprised and let his guard down.
