It would be perfect to just show a grown up ferris frustrated at work. Stuck at a 9-5 on the brink of snapping and just wants a day off. A grown up ferris writes itself he wants relive his youth and ashamed how time has passed him by.

Jobs where you aren't allowed to take a personal day or a vacation day - those are jobs for teenagers and college students. Or people who end up being a burger flipper.
A movie about a teenager playing hooky from school and doing all sorts of things around the city, that worked fine. A movie about an adult calling in sick to work then having fun - that would be cringeworthy.
Possibly Ferris could be the boss or parent, and the younger person is ditching school or work. And this time it's Bueller who is in Rooney's position. That may work.
