From what I understand, really old man David Lo Pan claims he has a chinese demon god inside him where he has to do ritual sacrifices of green eyed girls to appease the demon inside of him?

No offense dude, but pay closer attention the film.
Lo Pan was an ancient sorcerer who tried to usurp China from the first Sovereign Emperor (the first guy to conquer all the kingdoms). The Emperor had him cursed to become an immortal but unliving, immaterial ghost, essentially. He's a wraith, with great power, but no true form of his own anymore. To regain a physical form, he has to marry a girl with green eyes, which in China was almost non-existent, so it was never expected to happen. To become all-powerful and essentially be able to take over the world, he has to sacrifice a girl with green eyes. Since he lucked out and found two such girls, he figures he can have his cake and eat it to. It's not that complicated.
