Does anyone know what that is?

If you take a lobster--or lobsters--up in a plane, apparently
it--he, she, they--will explode. Or so I've heard.

So I'm presuming this isn't what the chef does.

Tried the Yahoo search engine for it, but came up empty. I've always wondered what in the hell this dish is. Sounds pretty good, I must admit, being that I like most of my meat well-done.
