Two things...

***It is my contention that Rachel was using the Book situation to have "a final fling" before she ends up in an inevitable marriage to Daniel.

***As well, it seems as if she also used her realtionship with Book to challenge the Amish mores, to sort of mix it up, as it were. At the barn raising, she plainly served Book first to get a rise out of Eli and the others.
