I don't understand? Why?

It s GriswOld in all the movies except this one.

In this movie they changed it to GriswAld to give the name more of a GERMAN sound since they had relatives in Germany, they wanted to reflect the fact they had German ancestry.

GrisWald is German for "gray forest".
