You didn't say the joke was dated, you said it "doesn't hold up". Which in my book are two different things.
But my point was, the movie takes place in 1985. So if you know that in 1985, there were a lot of jewish doctors, then the joke still holds up. If the movie took place in 2013, it probably wouldn't hold up as much.
All the jokes in Blazing Saddles about the white townies freaking out that they have a black sheriff "hold up" because of our knowledge that in the old west, there were few, if any, black sheriffs and society was extremely racist and segregated. You wouldn't say, these jokes 'don't hold up' because today black sheriffs are a common thing.
So despite it being a little dated, it still holds up. To me anyway.

Wow, I've seen this probably 15 times but I never knew that they were Jewish names and that was the joke. I always thought the joke was just him reeling of various names that sounded like the doctors he saw on the staff list.

On the board with the list of doctors, there were seven or so names. All of the names were Rosen_______.
The joke survives regardless of your experience with Indian doctors.
I ran the linen and scrubs dept at a small hospital from 1987-1991. Almost every doctor there had a last name that started with Rosen. There were no less than 3 Dr. Rosenbaum's on staff. We used to joke around about being checked for a hernia by Dr. Rosenpenis.

I watched the movie as a teenager, and I didn't know anything about jewish people (I did not live in USA), so that particular fact of the names -wooshed- over my head, and yet I was on the floor, laughing so hard I could hardly breathe.
