He actually never was in it. Here is an excerpt from an interview that Peter did with IGN where he clarifies about his role in "Enemy Mine":

IGNFF: Speaking of cult status sci-fi films, you also did Enemy Mine, right?

JURASIK: Absolutely, but you'll never see it. I don't know if you're aware of that, I don't know if you ever saw it – you know I'm not in it. The circumstances quickly behind that – I've actually dropped it from my resume, because people ask me all the time, "Hey, you were in that movie? Where were you?" Basically, I got hired to do it, went over to Hungary, was waiting for the people to come and do the movie ... the original director got fired because he got further and further behind, and the new director basically remade the movie. So my stuff, which was kind of neat stuff, a gravedigger role – never got in. It was a really fun project that now in my mind distinguishes itself in the fact that it was kind of my Heaven's Gate. They flew me over to Hungary, Budapest, and I kind of hung out there on salary. They got delayed – more snowstorms than Iceland – and every time I would say, "Do you want me just to hang out here?" And they'd say, "Oh, let's see, wait a minute, hold on a second. Who are you? No, no, don't go back to L.A. – stay there. You're okay." That went on for weeks. Eventually what I did, I flew my dad over and he and I went to Czechoslovakia – he's Slovak, and we went and visited his family. Then I called in, checked the production house again. They'd say basically, "Who is this? Oh, yeah, okay. No, no, no, just stay right there," and send me a check. We went down to Venice, Italy, and killed time. Eventually they cancelled the whole thing and said, "We'll get back to you." I went to England. The thing for me basically became a paid travel in Europe for a summer, which I really needed anyway. I was breaking up with a girlfriend, so it was a great thing. That's my Enemy Mine story.

IGNFF: So it was a wonderful experience.

JURASIK: Enemy Mine was a great film for me. A really important film. I'm not in it – but it's really important.
