The composer is James Last- the piece is called "The Last Shepherd". It can be found on the Kill Bill Volume 1 Soundtrack, performed by pan flutist Zamfir (with the James Last Orchestra I believe). You can also find it on iTunes- just search for "The Last Shepherd" or Zamfir.
