Someone explain me the bird dish

What's the deal?

If a game bird is described as "high" it means that it has been hung and dry-aged to allow the its tissues to break down. It's supposed to make the meat more tender and flavourful.

That led me to wondering whether the same might apply to chicken or pork. A blogger notes that the kinds typically bought in a Western grocery these days are very young animals (unlike much game fowl), so the meat is already naturally tender.
