Misery is the best horror adaptation, by far. Shawshank is my favorite of all options, horror and non-horror.

I'd have to say Stand By Me, with Shawshank Redemption in close second and nipping at Shawshanks heels in 3rd would be Pet Semetary(Bad acting, I know, except for Herman Munster but it's loyalty to the book and it's overall creepiness make up for it.)

I'd have to say The Green Mile, I think that's a beautiful movie, followed by Shawshank, The Stand (I loved it for better or worse) and Hearts in Atlantis in that order.

Keep in mind that You asked what I thought the best movies were, not how well they adapted the books :) That would count out Hearts in Atlantis and maybe the Stand and would cause Misery to be Added. When I saw Kathy Bates as Annie it was the only time I ever literally wondered if they pulled a character out of my brain somehow :)

The Green Mile - absolutely the best adaptation and most accurate and most moving and ....

I cry every time I watch this movie, and likewise every time I read the book(s). It is simply an amazing story

Shawshank and Stand By Me are SOOOOO far above any of the other zillion King adaptations out there, it's not even close. Others (Green Mile, Shining) are very very good movies, and several others are quite enjoyable to varying degrees, but those 2 are truly GREAT movies, and those don't come along every day (which seems to be about how often King pops out a book... lol).
Interestingly, there was a survey done in one of the big movie sites/magazines, comparing the roughly 100 King projects, and the massively overwhelming agreement was on Shawshank 1st, Stand by me a close 2nd, Shining/Green Mile close next, then some variety as honorable mentions (Carrie, The Stand, Pet Sematery. )

Gosh, my first thought was The Shining, especially with Jack Nicholson. After reading everyone's lists, it dawned on me how great so many of his movies were.
The Shawshank Redemption was definitely up there. Also, Stand By Me. You can't beat The Green Mile. Misery was good. Delores Clayborn was pretty good. The Stand turned out kind of funky and so did -It, but they were good enough. I also thought Apt Pupil was pretty good, not one of the best, but worth a mention. I've read almost everything Stephen King ever wrote. My favorite book was The Long Walk under the name- Richard Bach. That one was a real suprize. They should make a movie of that!
I think when movies first come out, they're often better, because they're more of a suprize. The movie- It was pretty scary at the time, but seemed a little corny many years later. No one would sit with the actor that played the clown on the set because he creeped them all out. Janet Leigh said she never took a shower again after making Psycho. I thought in The Shining, the kid saying Redrum over and over and those twins in the hallway were really creepy/suspenseful. It's not the same now, as we've added lots more things with time. Just like the old vampire and Frankenstein movies and The Exorist really freaked people out at the time they originally came out.
