Carradine was a professional dancer up until the Kung Fu series which is when he developed a real-life interest in Kung Fu. Lone Wolf McQuade was filmed in '83, so Carradine had a lot of time to learn "some" martial arts. If you read Carrdine's biography you'll discover that even though he lived in his Master's Dojo for a period of time, he didn't take life seriously enough and was forced to move out.
Chuck's stunt men on LWM allegedly took several hard knocks from Carradine, harder than usual, and reportedly told Carradine to back off, that if he did that with Chuck he'd get his arse kicked. This is verified in the Trivia section: http://www.imdb.com/title/tt0085862/trivia
Although they traded blows at the end, the reason McQuade resorted to blowing up Wilkes with a hand grenade is because Carradine had a stipulation in his contract that his character could not be defeated in hand-to-hand by Chuck's character.
Although I've never met Carradine, having read his very own biography, I can believe reports from others who say they have and that he's an arrogant pr*ck.
