I don't know any such book either, but I just wonder why do you need it?
Mr Rochester gives us his perception of the period of courtship in the dialogue
of separation (in order to make Jane see how he feels about her). And he has
refered to his previous life many times. Charlotte describes the rest through
Jane Eyre's perceptive eyes.
Anyway, I have heard that Wide Sargasso sea doesn't describe him under a
favorable light and the same goes for the sequel Jane Eyre's daughter.
Personally I think that a real writer should create his own characters and if
he should "borrow" some from other novels he should at least respect the fact
that they are someone else's creations and that are pretty loved as they are.
So, I wouldn't like to encourage such writing or if I did read them I would
judge them as separate novels with similar names.
I would be interested though to learn the title of the book with Mr Darcy's
perceptions as Elizabeth Bennet doesn't at all pretend to know his thoughts
or when she does, she is totally wrong. It should be amusing.
